Canadian Comfort Food Recipe







I finally had a chance to use my brand new red enamel casserole dish that my Mom and Dad gave me for Christmas. My specialty; the one 'they' beg me to make. It's....Homemade Macaroni and Cheese..... quite easy. Here's the recipe:
1 large package of macaroni elbows
1 large 500 g package of Crackerbarrel marble cheese
1/2 cup of real butter
1/2 cup flour
2 cups of whole milk or half and half cream
salt and pepper to taste
Boil a big pot of water. Cook the elbows. While they are bubbling away, grate the cheese.
1/2 will be used for the cheese sauce. 1/4 will be tossed into the cooked elbows. 1/4 will go on top.
Meanwhile take a saucepan and melt the butter (don't burn). Add in the flour and whisk until silky smooth. Pour in the milk. Bring to boil. Stir constantly. Soon as it begins to boil take off heat and add the cheese. Whisk into a wonderful buttery cheese sauce. Put aside.
Rinse the cooked elbows. Pour into casserole dish. Stir in the cheese sauce. Fold in the grated cheese and then top with the remaining grated cheese. Salt and Pepper.
Bake on 275 degrees for 1 hour covered. 1/2 hour uncovered until top is perfect and crispy.
Serve with steamed green beans and a fresh salad.
Delish. (if I do say so myself)

Oh...hope you don't mind..I am writing this one down. It's breakfast time here in Canada where we live and I would LOVE a warm plate of Mac and Cheese.
